Ingredients
- 270g self-raising flour
- 300g butter
- 300g sugar
- 5 eggs
- 30g desiccated coconut and need some extra for topping
- 3tsp of vanilla essence
- 2tsp baking powder
Method
1. Pre-heat the oven to 180Oc (gas mark 4)
2. Beat the butter and sugar together until a creamy texture is formed
3. Gradually add each egg to the mixture and mix well
4. Sift the flour and baking powder to the mixture
5. Finally, add the vanilla and desiccated coconut and mix until all the ingredients are well combined
6. Pour the mixture into a greased, lined tray and bake in the oven for 20 minutes
7. After 20 minutes, place a sheet of foil on top of the cake to prevent the upper layer from burning
8. Further bake the cake, for approximately 15 minutes, until cooked
9. Cool the cake, then cut into two layers
10. On one layer of the cake, spread a jam of your desired taste
11. On the other layer, spread cream
12. Assemble the cake so that the top layer is jam
13. Sprinkle some desiccated coconut on top of the jam
