Trifle

Ingredients:
  1. 750ml carton ready made custard
  2. 150 (50z) white chocolate, chopped
  3. 1 large jam-filled Swiss roll, sliced
  4. 5tbsp orange juice
  5. 500g (18oz) ) raspberries
  6. 200ml (7fl oz) double or whipping cream 
  7. White chocolate curls (or grated white chocolate), 
  8. Mint leaves and icing sugar, to decorate

Method:
1. heat the custard in a pan, being careful not to let it boil. Stir in the white chocolate pieces until melted. Leave to cool, stirring occasionally.
2. place a layer of Swiss roll slices around the side and bottom of a large glass bowl, sprinkle on the Orange juice, add a layer of custard and scatter with raspberries.
3. Repeat process, using remaining Swiss roll, custard and raspberries, reserving a few raspberries to decorate.
4. Whip cream until soft peaks form. Spoon over trifle, scatter with remaining raspberries, the white choc curls or grated white chocolate and mint leaves, then dust with icing sugar. Chill until ready to serve...
Takes: 20 mins 
Serves: 6

White Chocolate Brioche Pudding


Ingredients:
  1. 1 brioche loaf cut in to cubes 
  2. 2 pun nets raspberries
  3. 2 large packs of white chocolate buttons 
  4. 3 eggs
  5. 1tsp vanilla extract 
  6. 500ml double cream
  7. 75ml crème fraîche
  8. Icing sugar
Method:
1. Butter a baking dish and spread a layer of brioche cubes then 2/3 of the raspberries on the bottom followed by 2/3 of the white chocolate buttons
2. Top with another layer of brioche then put the remaining raspberries and buttons in to the top of the pudding
3. In a bowl mix the eggs, cream, crème fraîche and vanilla essence to make custard and pour on top
4. Bake at 200°c (gas mark 6) for 25-30 minutes then remove and allow standing before sprinkling with some icing sugar and serving.

Orange Cake


Ingredients:
  1. 4 small oranges or 3 medium sized ones
  2. 7 small eggs or 6 large ones
  3. 225g caster sugar
  4. 250g ground almonds
  5. 1tsp baking powder

Method:
1. Put oranges in a pan with some water, bring to the boil for 2 hours on medium heat, after that drain the excess water and let them cool down, cut each orange in half and remove pips, then put the whole orange (with skin) in a food processor or in a blender and mix, now put all the other ingredients together and give it a good mix
2. Preheat the oven to gas mark 5, butter and line an 8 inch tin
3. Now pour the cake mixture in to the prepared tin and bake for an hour or when the skewer comes out clean you should cover the cake with foil it will stop the cake burning from the top, you should do this after approximately 40 minutes of baking
4. Remove from the oven and leave it cool on a rack whilst still in the tin.
Best served with cream, hope you all enjoy! - this cake can be made gluten free by using gluten free baking powder or not using baking powder at all!

Coconut and Jam Sponge Cake


Ingredients
  1. 270g self-raising flour
  2. 300g butter
  3. 300g sugar
  4. 5 eggs
  5. 30g desiccated coconut and need some extra for topping
  6. 3tsp of vanilla essence
  7. 2tsp baking powder

Method
1. Pre-heat the oven to 180Oc (gas mark 4)
2. Beat the butter and sugar together until a creamy texture is formed
3. Gradually add each egg to the mixture and mix well
4. Sift the flour and baking powder to the mixture
5. Finally, add the vanilla and desiccated coconut and mix until all the ingredients are well combined
6. Pour the mixture into a greased, lined tray and bake in the oven for 20 minutes
7. After 20 minutes, place a sheet of foil on top of the cake to prevent the upper layer from burning
8. Further bake the cake, for approximately 15 minutes, until cooked
9. Cool the cake, then cut into two layers
10. On one layer of the cake, spread a jam of your desired taste
11. On the other layer, spread cream
12. Assemble the cake so that the top layer is jam
13. Sprinkle some desiccated coconut on top of the jam

Custard Pie


Ingredients: 
  1. Tea biscuit or digestive biscuits 1 packet
  2. Butter half cup ( u can use less or more)
  3. Strawberry or any flavored custard ( cooked)
  4. Readymade strawberry syrup
Method:
Make custard as we cook but for this pie custard should be very thick…
Chop biscuits in a chopper and add melted butter and mix well… if mixture looks so crumby then u can add little more butter….
Take a serving dish …. Press this biscuit mixture in bottom… and give a layer of cooked custard and keep in a fridge for few hours… before serving drizzle strawberry syrup n ENJOY…
You can use any flavor of custard…

Meethi Tikkiyan


Ingredients:
  1. All purpose flour 2 cups
  2. Semolina half cup
  3. Sugar 1 cup
  4. Baking soda ¼ tsp
  5. Desiccated coconut half cup
  6. Green cardamom powder half tsp
  7. Ghee or oil ¼ cup
  8. Milk for kneading
  9. Oil for frying

Method:
Mix all ingredients and make medium soft dough and keep aside for half an hour.
Then roll with rolling pin cut into shapes and fry on medium heat.. SERVE…..

Special Chaat

Ingredients:
  1. Yoghurt
  2. Mint chutney
  3. Imli Chutney 
  4. Besun/ Moong daal pakoriyaan
  5. Onion ( cut into sliced)
  6. Tomato ( cut into sliced)
  7. Fresh Mint leaves
  8. Boiled and cubed potaoes
  9. Salt to taste
  10. Chaat masala to taste

Mix yoghurt with salt n chaat maslaa. Add soaked and squeezed pakoriyaan , potatoes and mint chutney in it. Now take a serving bowl pour this mixture, pour imli chutney on top. Garnish with sliced onion, tomatoes n mint leaves.. sprinkle Chaat maslaa n serve….

Imli Chutney


This chutney goes with all type of iftaar items like samosay, pakoray, kabab , rolls and also for topping over chaats. So prepare this and store in a fridge… 
1st u will need Tamarind / imli pulp: 200gms
Soak in 3 to 4 cups of water for an hour
Mix with spoon or hands so that the seeds will be separate. Strain the seeds, and now u have tamarind/ imli water
For chutney/dip

Ingredients:
  1. Imli water
  2. Sugar 3 cups
  3. Salt 1 tsp level (if u r using salty tamarind then don’t add salt)
  4. Red chili powder 1 tsp level
  5. Chaat masala 1 tsp level
  6. Ginger powder half tsp
Put all ingredients in a cooking pot and cook on high heat
When it starts boiling then reduce the heat to medium and cook
Till it remains half in quantity or reached at desire thickness.
Cool it completely
Pour in a bottle and keep in a fridge.

Mint Chutney

Green chutni

Ingredients:
  1. Coriander leaves 2 cups
  2. Mint leaves 1 cup
  3. Garlic cloves 2
  4. Zeera 1 tsp
  5. Green chillies 2
  6. Annar dana 1 tsp
  7. Water half to ¾ cup


Sab cheezon ko blender ma daal k pees lein… aur ice cubes tray ma daal k freeze ker lein… aur jub bhee zarorat ho nikaal k 20 to 30 seconds microwave ma rukhein aur istamaal karein..


Yoghurt Chutni


Ingredients:
  1. Yoghurt 1 cup
  2. Salt ¼ tsp 
  3. Green chutni 1 cube
Yoghurt ko achi terha beat ker lein phir os ma salt aur green chutni add ker k mix karein aur serve karein…

Chocolate Lasagna

INGREDIENTS:
  1. Oreo cookies– about 18 cookies 
  2. 3 Tablespoon butter, melted 
  3. 1 cup cream cheese, softened 
  4. 1/4 cup granulated sugar 
  5. 2 Tablespoons cold milk 
  6. 2 cups cooled whipped cream
  7. Chocolate Instant Pudding or chocolate custard 
  8. 1 and a half cup milk for making pudding or custard
  9. 1 cup chocolate chips 
DIRECTIONS:
Begin by crushing Oreo cookies. I used my food processor for this, but you could also place them in a large ziplock bag and crush them with a rolling pin. When the Oreos have turned into fine crumbs, you are done. Transfer the Oreo crumbs to a large bowl. Stir in melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distributed, transfer the mixture to a baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.
Mix the cream cheese with a mixer until light and fluffy. Add in 2 Tablespoons of milk, and sugar, and mix well. Stir in 1 cup Cool Whipped cream. Spread this mixture over the crust. Use a spatula to spread the chocolate pudding or custard mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further. Spread the remaining Cool Whip over the top. Sprinkle chocolate chips evenly over the top. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.


White Chocolate Popcorns


Kids will love to eat these yummy popcorns… 
Ingredients:
1. 2 cups cooked popcorn 
2. half cup white chocolate chips 
3. M&M’s 

Method:
Crush the M & M’s. Melt the white chocolate in microwave.
Place half the popcorn in a large bowl. Pour half the melted chocolate over the popcorn. Sprinkle with half the M&M’s. Use a large spoon to combine all of the ingredients. Line two baking sheets with wax paper and pour the popcorn on the tray so that the white chocolate can set. Place the remaining pop corn in the large bowl; add in the remaining chocolate, the rest of the M&M’s, Stir to combine. Pour the mixture onto a baking sheet lined with wax paper and give it about 10-15 minutes for the chocolate to set. Serve or keep in airtight box…

Tandoori Chicken


Ingredients:
  1. 1 chicken cut into 10-12 pieces/skin removed (approximately 1 kg)
  2. 1 cup yogurt
  3. 3 tablespoons lemon juice
  4. Half tablespoon ginger paste
  5. Half tablespoon garlic paste
  6. 1 teaspoon ground black pepper
  7. 1 teaspoon turmeric
  8. Orange or red food color ¼ tsp
  9. 2 teaspoons ground red chili powder 
  10. 1/2 teaspoon ground cinnamon
  11. 2 teaspoons ground cumin
  12. 3 tablespoons oil
  13. 1 and a half teaspoons coriander powder
  14. 2 teaspoons salt (adjust to your liking)
  15. 2 teaspoons dried fenugreek leaves
Method:
Make cuts on the chicken pieces with sharp knife.
In a large bowl, combine the lemon juice, salt, food color and turmeric. Add the chicken pieces and mix to coat. Let marinade for 20 minutes. In a separate bowl, combine the yogurt, oil, garlic, ginger, and remaining spices. Add yogurt mixture to the chicken and mix well.Let marinate for at least 3-4 hours.
Cooking in the oven:
Preheat oven at 200 C.
Line a large roasting pan with foil. Once the oven is hot, place the pan with the chicken in the oven. Turn the chicken pieces after 20 minutes of cooking .Roast for another 10-15 minutes; turn the pieces and Cook for an additional 7-10 minutes. Turn the oven off and let the chicken rest in the closed oven for 10-15 minutes more.

Pink Tea


Ingredients:
  1. Water 4 cup
  2. Good quality green tea 1 tbsp
  3. Green cardamom 4 to 5
  4. Cinnamon stick 1 inch piece
  5. Aniseed/sounf half tsp
  6. Baking soda less than a quarter tsp
  7. Milk 1 liter
  8. Sugar to taste
  9. Salt 1/3 tsp
  10. Chopped or crushed pistachio for garnishing

Method:
In a sauce pan add water, green tea, cardamom, aniseed and baking soda.
Cook on high heat till it starts to boil then lower the heat and keep simmering till it remains to 2 cups…. After simmering qahwa will be pinkish in color…
U can keep this qahwa in fridge for a week to later use…
Whenever u want to drink Boil 1 liter of milk , add sugar n salt..
Then add pink qahwa and cook for few minutes… pour in cups, garnish with nuts n serve…

Bread Pakora


Ingredients:
  1. Bread slices, remove the brown sides 
  2. Gram flour/ besun 1 cup
  3. Salt half tsp
  4. Red chili powder half tsp
  5. Turmeric powder half tsp
  6. Cumin seeds powder/ zeera powder half tsp
  7. Corinader seeds powder half tsp
  8. Water for mixing

Mix all the spices in gram flour and mix with water to form mixture.
Mixture should not be too thick or runny just medium consistency.
Ingredients for filling:
  1. Potatoes 2 large, boiled and mashed
  2. Spring onion chopped 1/3 cup
  3. Fresh coriander leaves chopped 1/3 cup
  4. Salt 1 and a half tsp
  5. Red chili powder 1 tsp heaped
  6. Turmeric powder 1 tsp
  7. Cumin seeds powder 1 tsp
  8. Dry coriander powder 1 tsp
  9. Chaat maslaa 1 tsp

Mix all the above ingredients in a bowl. (u can add more or less spices according to ur taste)
Now take 1 slice of bread, apply 2 tbsp of potato filling and cover with another piece of bread. Press it slightly and keep aside. Make all sandwiches with this method.
Now heat oil in a wok/ karahi on medium heat. Dip one sandwich in gram flour mixture and drop in oil , Fry till golden from both sides.
Fry all sandwiches like this and before serving cut into halves and SERVE !!!

Biryani Rice


Ingredients:
  1. Boiled rice with salt and 2 tbsp of vinegar
  2. Onion 1 large, chopped
  3. Tomatoes 2 large, chopped
  4. Ginger, garlic paste 1 tbsp
  5. Yoghurt 2 or 3 tbsp
  6. 2 or 3 tbsp biryani masala
  7. Oil 1/3 cup


  • If u don’t have biryani masala then add these spices
  1. Salt according to rice
  2. Red chili powder
  3. Turmeric powder
  4. All spice powder
  5. Bay leaf
  6. Some cloves and whole black pepper
  7. Few drops of kewra essence.
  • Fry onion in oil till slightly golden then add tomatoes and ginger, garlic paste…. Fry for few minutes then biryani masala (if u don’t have it then use other spices)
  • Cook for a minute then add yoghurt, mix well and keep on low heat till masala done and oil comes on top…
  • Now resemble the rice and masala for dum…
  • On the bottom of cooking pot add half of masala, then 1 layer of rice.
  • Again layer the remaining masala and top layer with rice…
  • Cover with lid and put on very low heat for 5 minutes… that’s it….

Fried Dhaka Chicken


Fried Dhaka Chicken ( recipe in english & urdu )

Ingredients:
  1. Chicken 1kg cut into 12 pieces
  2. Water 1 cup
  3. Red chili powder 2 tsp
  4. Turmeric powder 1 tsp
  5. Salt 2 tsp
  6. Dry coriander powder 2 tsp
  7. Yellow food color half tsp
  8. Ginger, garlic paste 1 tbsp
  9. Juice of 1 lemon / 3 tbsp vinegar 
  10. Corn flour 5 tbsp
  11. Sesame seeds 1 tbsp
  12. Oil for frying
Recipe in Urdu: 
Aik cooking pot ma chicken, water, red chili, turmeric, salt, coriander powder, food color, vinegar ya lemon juice aur ginger garlic paste daal ker mix karein aur medium heat per cook karein. Jub pani bilkul na honay k baraber reh jaay to os ma cornflor aur till daal k achi terha mix ker lein. Is terha chicken k pieces per corn flour aur till ki coating ho jaaygi… Ab karahi ma oil garam ker lein aur medium heat per piece fry ker lein… karahi ma saray pieces aik saath nahee dalnay werna chamuch chalatay howe coating oter jaaygi.. Aaap chicken per masala laga ker freeze bhee ker suktay hain… next time use k leye..

Recipe in English: 
In a cooking pot add chicken, water, red chili, turmeric, salt, coriander, food color vinegar or lemon juice, and ginger garlic paste. Mix well and cook on medium heat. When water near to dry then add corn flour and sesame seeds and mix well. Corn flour and sesame will coat on all chicken pieces.. then remove from heat.
Heat oil in a wok and fry chicken pieces on low- medium heat till golden brown ….

Gulab Jamun

For syrup
  •  2 ½ cup water
  • 1 ½ cup sugar
  • Cardamon powder half tsp ( optional )
  • 1 tbsp honey (optional)

Ingredients for Gulab jamun
  • 1 cup milk powder
  • 3 tbsp all purpose flour level
  • 1 tsp semolina level
  • 1tsp baking powder
  • 1 egg
  • 3 tbsp thick cream level
  • 1 tbsp oil


Mix all ingredients of syrup in sauce pan and when it starts boiling low the heat and cook…
Another side mix all gulab jamun ingredients except oil… it will be sticky then add 1 tbsp oil and make small balls.
Then fry these balls on very low heat until brown.If u will fry these in two bathes then after fry 1st batch off the flame to cool down the oil little bit then again fry another batch on very low heat. 
Add these fry balls in sugar syrup and cook 5 minute on low heat and then 1 minute on high heat…totally cook only for 6 minutes…
Switch off the stove but don’t remove gulab jamun from syrup… garnish with crushed pistachio

Lemon Soda


This soda taste too good and refreshing in hot summer....

Ingredients:

  • 7up 1
  • Juice of 2 lemons
  • Sugar 1 tbsp
  • Salt ¼ tsp ( preferably black salt)
  • Ice cubes

Blend all the above ingredients in a blender and immediately serve…
Tip: You can adjust the ingredients according to your taste…

Falooda

Kulfi:
  1. 1 liter whole milk 
  2. 1 cup heavy cream/whipping cream
  3. ¾ tsp cardamom
  4. 8 skinned unsalted almonds 
  5. 8 skinned unsalted pistachios 
  6. 200 ml condensed milk 
Grind the almonds and pistachios. Now take a wide non stick saucepan and pour milk. Put the stove on medium heat. When the milk starts to bubble then reduce the heat a little and add the remaining ingredients. When they are nice and hot then turn your heat down to low and cook until it becomes thick. Let the mix cool and pour into air tight container and put it in the freezer for 8-12 hours.

Falooda : 
  1. 2cup water 
  2. 1cup corn flour 
  3. 1 large bucket chilled ,iced water 
Mix together corn flour and water and cook on medium heat until it becomes thick and transparent. Now take your falooda machine and put over iced water bucket and pour the cooked mixture in the machine and press really hard. Make sure noodles will drop in the iced water. after you finish put this noodles bucket in the fridge before serving. Serve: take out your ice-cream bowls .Put some kulfi and then falooda in it and pour roohafza or sugar syrup as ur desire.

Chicken Malai Tikka


Ingredients:
  1. Bon less Chicken half kg cut into small pieces
  2. Yoghurt 2 tbsp
  3. Fresh cream 2 tbsp
  4. Corn flour 1 tbsp
  5. Ginger garlic paste 1 tbsp
  6. Black pepper 1tsp
  7. Salt 1 and a half tsp
  8. Lemon juice 1tbsp
  9. Garam masala 1tsp
  10. Butter 1 tbsp
  11. Coriander leaves chopped 1 tbsp
Mix all ingredients with chicken except butter and keep aside for minimum 1 hour…
Pre-heat oven 240c
Grease a baking pan with butter and place the marinated chicken pieces on it.
And cook in an oven for 10 to 15 minutes turning once or twice to ensure even cooking. Garnish with chopped coriander and Serve with salad chutni…

How to make Onion Flower


Chicken Minced Cone


For cone : 

  • 250 gm flour 
  • 1 egg 
  • 1cup luke warm milk 
  • baking pwdr 1 tsp 
  • yeast 2tbsp 
  • sugar 2tbsp
  • salt 1/4 tsp 
Mix all the ingredients and make dough . set aside for 30 min to rise .when dough become size double divide into 5 equal portions .make each portion into a strip and roll over a cone then egg wash each cone and sprinkle sesame seeds .bake for 8-10 min.

Filling: 

  • 1packet chicken minced 
  • 1 small onion 
  • 1/2 bunch coriander leaves 
  • Green chili 4-5 
  • Salt n red chili powder according to taste 
  • Coriander powder 1tsp 
  • oil 1/4 cup 
Mix all ingredients and cook on low heat . fill each cone with this filling before serving

Chedder Cheese Salad


INGREDIENTS 
  1. Pasta of your choice
  2. 1 red bell pepper..1 cucumber
  3. Cheddar cheese cut into small chunks 1/4 cup 
  4. Finely chopped onion 
  5. 1 cup mayo 
  6. 1/4 cup sugar 
  7. 2 tablespoons apple cider vinegar 
  8. 1/2 teaspoon black pepper 
  9. 1/2 teaspoon dried parsley 
DIRECTIONS 
Cook pasta according to package directions, then drains and rinse under cold water until the pasta has cooled. Drain well. In a large bowl combine mayo, sugar, apple cider vinegar, black pepper and dried parsley. Combine the pasta with the dressing, then stir in chopped red bell pepper, cucumber, finely chopped onion, and chunks of cheese. Chill for one hour before serving. Enjoy!

Easy coffee Dessert



Ingredients
  • Cocoa Powder 1 tsp
  • Coffee 3 tsp
  • Sugar 2 tbsp
  • Corn Flour 5 tbsp
  • Milk 1 liter
  • Condensed Milk ½ tin
  • Cream ½ cup
  • Shredded Chocolate 1 cup

Cooking Directions
  • First boil milk. Now add sugar in it. In a bowl add coffee, cocoa powder and corn flour and add a bit of milk and dissolve it.
  • Then put this mixture in the milk and mix it.
  • Now turn off the stove and put ½ tin condensed milk in it and mix it.
  • In the end add cream and garnish with shredded chocolate.
